Yields six 3/4-cup servings.

4 cups fresh Tomato Juice (you make)
1/2 cup Cucumber, chopped
1/4 cup Green Bell Pepper, chopped
1/4 cup celery, finely chopped
1 Tbs. Olive Oil
1/2 tsp. Pepper
1 tsp. Basil
1/2 tsp. Garlic, minced

Combine all ingredients. Cover and chill overnight.
